Tasty Tuesday

Here is one of those "days with a focus/purpose" I talked about in my New Year's Goals post. I wanted to do something like a Music Monday or Sunday FunDay, but those are already being done. So I setteled on Tasty Tuesday. In these posts I will highlight, with pictures, one of the meals I cooked this week.

Here is the first recipe:

Taco Soup:

Ingredients:
  • 1 lb. of ground beef or turkey
  • 1 medium onion, chopped
  • 1 can pinto beans
  • 1 can black beans
  • 1 can chili beans
  • 2 cans Mexican style chopped tomatoes
  • 1 can of corn
  • 1 package taco seasoning
  • 1 package ranch dressing mix







Directions:
  • Brown beef or turkey in a large skillet (I put the onions in here too and season w/ pepper and some Lowry's seasoning salt)
  • Drain grease
  • Pour beef/turkey into large pot
  • Add all other ingredients (I don't drain the cans. You could if you'd like to)
  • Simmer for 1 hour
*Enjoy***If you live by yourself, this makes a ton! It's great to portion out and freeze. That way you have something quick you can toss in your lunch or thaw out for dinner. I never have enough left overs because my husband eats it all!**

So there you have it. My first recipe! Now I cannot take credit for the invention of this recipe. It is an old Weight Watchers recipe that my mom had given me. It's supposed to only be 3 points for 1 cup of the soup! You can also make this as spicy or as mild as you'd like. It's a challenge for me finding all the of the ingredients in a gluten-free variety. I end up having to cheat because I haven't found gluten-free ranch dressing mix. I guess I could just stick in a tablespoon or so of actual dressing. I also like to serve it with Tostios chips.

  1. Awesome new tradition! I would definitely try it...if I wasn't the pickiest eater on the face of the earth (I hate onions, beans, and tomatoes...I think I'm the only person on earth that hates tacos) but i will definitely keep coming back for more! I can't remember...did you say you wanted to be added to 1,010?
